Newly refurbished Grand Hyatt launches new bar and restaurant
The $45 million redevelopment of the Grand Hyatt Melbourne is in its final stages unveiling its new upper and lower lobbies, the restaurant Collins Kitchen and exclusive bar RU-CO just in time for the 2008 Spring Racing Carnival.
The interior fit out currently being installed features cutting edge design that enhances the art deco references of the building, making use of Australian timbers and Italian and Grecian marble.
The redeveloped façade on Collins Street has also been revealed and will become the entry point to a luxury retail arcade, including exclusive stores from Bulgari, Paspaley Pearls and Emporio Armani.
With a focus on local and organic produce, Collins Kitchen will bring simplicity back to the dining table, its menu featuring many authentically prepared favourites including fresh sushi and dumplings, grills and home-made pasta as prepared by rising culinary star Jason Camillo.
With its dramatic design complete with stunning outdoor courtyard, visitors at the exclusive new watering hole RU-CO will be able to choose from a spectacular wall of 2000 bottles of premium wine and an impressive list of martinis, crushes and classic cocktails, as well as a great variety of single malt whiskeys and cognacs.
